Chelbesa One, named after the washing station where it was processed, is full of complex flavors. We love the variety and depth, leading with apricot, grape, and a black tea finish. We also picked up mandarin orange, pomegranate, pineapple, and lemon on various tastings. Approximately 1,000 farmers deliver fresh cherry to Chelbesa One, each picking from their small, high-altitude, 2-3 hectare plots. The cherries were first floated to remove defects, then pulped and dry fermented for two to three days. With punchy flavors of pineapple, cherry, and raspberry, this is a surefire tropical delight.\u003c\/p\u003e\n\u003cp\u003eCup of Excellence winner Pablo Andrés Guerrero produced this coffee on his farm El Obraje in \u003cspan\u003eNariño, Colombia. Coffee cherries were hand picked at maximum ripeness. Then they were rinsed and floated to remove defects, all on the same day of picking. The coffee was fermented in cherry for 120 hours, followed my shade-drying for 8 days, finished with 38 hours of mechanical drying. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eSitting at an altitude of 2200 meters, more than half of the land is set aside as a nature reserve.
